Sweet Potato & Chick Peas Tagine

Ingredients
1 tin Chick Peas (washed & drained)1/2 Onions
1 Small Sweet Potato
1 peppers
50g Sultanas
20g Chopped Dried Apricots
1 tsp Paprika
3 tsp Cumin
1 tsp Turmeric
1 tsp Mild chilli powder
1 Chopped tinned tomatoes
100g Natural yogurt
1 clove of Garlic
20g Tomato puree
Chopped fresh mint
Method
- Sweat down the diced onions and finely chopped garlic in a large pan until soft and add 1/2 of the spices.- Cook the spices for a further minute to release the flavours.
- Add the tomato puree and cook with the onions until it takes on a rusty appearance.
- Pour in the chopped tomatoes, dried fruits and chick peas, bring to the boil and turn down to a simmer
Meanwhile
- Peel and roughly chop the sweet potatoes into large chunks and coat in the remaining spices and a fine coating of sunflower oil.
- Lightly roast the sweet potato at 180c for about 20 minutes or until soft and golden then fold in to the sauce 5 minutes before serving to heat up.
- Finish the sauce with the yogurt and fresh mint and serve with couscous or rice
