Courgette & Red Onion Flan

1/2 Courgette each180g Grated Cheddar
6 Eggs
1.5 pints of Milk
1 Red Onion
150g Sunflower Margarine
250g Self Raising Flour
50g Whole Meal Flour
70ml Water
2g Dried herbs
Method
- Pre heat the oven to 160c and lightly grease the inside of a 20cm quiche dish- Crumb together the flours and margarine to a fine bread crumb consistency then bind with the water to
form a smooth pastry. Take care to work the pastry t the absolute minimum at this stage to avoid a hard tart case at the finish.
- Rest the pastry in the fridge for 20 minutes
- Meanwhile roughly chop the courgettes and red onion and lay them on a baking tray.
- Lightly roast for about 5 minutes to add colour but retain the crunchyness and nutrition of the vegetables.
- Whisk together the eggs and milk and keep to one side.
- Roll out the pastry to a thickness of 4mm and line the dish leaving a slight over hang around the edge
- As you are using self raising flour in this recipe you do not need to bling bake the pastry.
- Lay the roasted vegetables, the herbs and the grated cheddar in the case and pour over the egg mix.
- Bake in the oven for 35 minutes or until the custard is firm to the touch and the quiche is hot in the centre.
- Serve the quiche hot or cold with salad and minte new potatoes
