Banana Cake

36g Self raising flour260g Margarine
260g Caster Sugar
6 Eggs
1 Banana
1tspn Baking Powder
Method
- Preheat your oven to 160c- Take the margarine and eggs out of the fridge for at least an hour before preparing your cake
- Cream together the margarine, banana flesh & sugar until white and fluffy
- Slowly add the eggs one by one taking care not to split the mixture
- Beat the mixture into a smooth cream then sift the flour and baking powder into the bowl and fold into the mix
- Line the bottom of a cake tin with greased parchment paper an spread the mixture evenly into the tin
- Bake your banana cake for 30-40 minutes and test by stabbing the centre with a clean small knife,
- If the cake is cooked the knife should be clean when you retract it from the cake.
- Turn the cake out of the tin and allow it to cool on a rack before dusting lightly with icing sugar to serve.
